Cranberry Citrus Cookies

Made these for a change of pace at Christmas time.

Ingredients

1/2 cup butter, softened
1/4 cup shortening, softened
1 1/2 cups brown sugar
2 tsp shredded lemon peel
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
2 eggs
1/2 tsp double strength vanilla
2-1/3 cups flour
1 cup chopped toasted walnuts
1-1/2 cups craisins

Directions

1. Preheat oven to 350F.

2. Toast walnuts for 5-10 minutes in baking pan. Cool and chop, set aside.

3. In large bowl, beat butter and margarine with mixer until fluffy. Stir in brown sugar,
lemon peel, baking soda, baking powder, and salt. Stir in eggs and
vanilla. Stir in flour. Fold in walnuts and cranberries.

4. Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheets and bake 10-12 min. Remove to rack to cool. Store covered in airtight container.
